Make-It-Yourself Mayonnaise


I went to my local farmers market this weekend. As you can imagine in February it is pretty bare. There is a limited amount of produce but what caught my eye were the fresh farmstead eggs for sale. I bought myself a dozen and one of the things I've made with them is homemade mayonnaise. Making mayonnaise from scratch is so darn easy! Most people run out of store bought mayo before they ever decide to make their own but if you have a couple minutes and a strong forearm, it whips up in no time. It tastes 100 times better than store bought mayo as well. Mayo is great for so many things. It is is good plain on sandwiches, mixed with tuna or eggs, or in dressings used in caesar salads and coleslaw. Yum! You can even kick up your mayo a bit by adding hot sauce, chipotle peppers, pickles, or garlic. Whatever you do, give making mayo at home a try. All you need is a few basic ingrediants to get you started. You'll need vegetable or canola oil, eggs, lemon juice, pepper, and salt. That's it! Below is a basic recipe to follow. Enjoy!

Make-It-Yourself Mayonnaise

2 egg yolks
3 Tbsp lemon juice
1/2 tsp salt
1/4 tsp white pepper
I cup vegetable oil

In a large bowl mix egg yolks, lemon juice, salt, and pepper with a wire whisk. Begin adding the oil very slowly as you whisk. Make sure the oil does not separate from the egg mix. Add all the oil, pouring slowly the whole time. If it isn't as thick as you want, add more oil until in reaches the desired thickness. Store in a jar in the fridge.
